ABOUT TRINITAS OLIVE OIL

The name of our olive oil, Trinitas, means "of the Trinity".   In naming and producing this oil, we wanted to honor the faith and traditions of our ancestors. For generations, olive oil has been a staple in our family. My great grandmother used olive oil in everything from her cooking to moisturizing her babies skin.

Our Trinitas estate blend is the perfect combination of our old growth Mission, Manzanillo, and Picholine olives. The trees were planted at the turn of the century on a rocky hillside of the Calaveras Appalachian Region in California's central valley. The climate and growing conditions mirror those of Mediterranean and produce an old world oil that is pungent and peppery.
